Cooking with Kenzie-Sausage Quiche

Over the past year Kenzie has really been into cooking and learning how to do different techniques in the kitchen so we chose Thursday as her night to help in the kitchen.  She can help any night but this is our special time to make something that she has chosen for the week.  Every 2 weeks she plans the menu for the next 2 Thursday night dinners and she's come up with some great ideas!  This past week it was a recipe she chose from Paula Deen's My First Cookbook

She browned the sausage and then put it into a rolled out pie crust


Adding 1/2 and 1/2 to the eggs

Next you pour the egg mixture on top


 Then you bake and enjoy!  It was really good and Kenzie did a great job, she chose fresh fruits to go with it and it made a delicious meal!

So my friend Dawn started doing Tasty Tuesdays so I decided to join her and I've found some yummy recipes.  If I can remember I'll post a new recipe every Tuesday....hmm, Dawn you may have to remind me!  LOL!

He's baaaaccckkk!

We have a little Welsh Corgi dog named Trix and 2 weeks ago he got our of our back yard and we have searched and searched for him but couldn't find him. Yesterday we get 2 phones calls from 2 different ladies in our area and they both think they have Trix. We saw pics of both dogs and they both have the exact same markings that Trix has! It was crazy!! After many phone calls back and forth we finally figured out which dog was Trix, he still had his green collar on but his tags were missing. We were able to pick him up last night and he's soooooo thin...poor baby! We were all glad to see him and he got a bath as soon as he walked in the front door because he was a stinky boy.

Galveston Beach



A couple of weeks ago we headed out for Galveston to go to that national dance competition and I wasn't very excited about the location.  EWWWW, the Galveston beach is kinda gross, at least the last time we were there BUT if you know us then you know we are going to have fun no matter where we go or what we do!  WE had such a great time at the beach skim boarding, boogie boarding, playing in the waves, looking at sea creatures, hanging out with friends and we were also very happy to report that no oil was spotted in Galveston from the oil spill!

Cousins

It's been 3 years since I've been back to NM or CO to see family and last week some of my cousins came into town for a baseball tournament.  It was the Jackie Robinson World Series 9U...I think I got that correct!  Anyway, we all got together at my moms house and had lunch and dinner and visited for hours.  It was so great to see them, my cousin Jeremy has 4 kids now!  Last time I saw him he only had 2 but they had a set of ADORABLE twins since then.

I was bummed that we didn't get to see Nathan play ball because it was the same time as Korea camp but his team did really good!  They got 3rd place in the tournament...so proud!

My cousin Krista (she's in the pic with Kevin) has changed so much, she was one of the flowergirls in our wedding and now...sniff, sniff, she's planning her own wedding! She's all grown up and getting her doctorate in physical therapy...wow, time flies!

Answers to Blue Hole questions



UPDATE: Prices have changed.  It's $10 per car to get in, $15 per night to camp with no electric and $20 per night with electric.

I have been getting a lot of emails about the Blue Hole in Salina, OK so here are some answers to the many questions.

1. Q:  Is it really cold?  A: Yes, it's spring fed so it's really cold and feels great on these hot 100 degree days!

2. Q: How much is it?  A: $5 per carload for the day and $10 to camp overnight

3. Q: What are the hours? A: Sunday-Thursday 9am-9pm and Friday and Saturday 9am-10pm and they usually close for the winter after Labor Day weekend

4. Q: Do they have bathrooms? A: Yes, but they aren't always reliable, sometimes they are closed and most of the time no toilet paper (hint... bring your own)

5. Q: Do they have a place to buy food? A: Yes, it's concession type food like popcorn, pizza, hamburgers, snow cones, french fries, etc and they have very reasonable prices.  You also have the option of bringing food in and yes they have picnic tables but they don't have a lot of them.

6. Q: What do I need to bring?  A: This is what I personally like to bring, drinks (no alcohol permitted), snacks, bug spray, sunblock or sunscreen, towels, a blanket for the kids to rest on, chairs (the ones in the bag that you bring to ball games sit very well in the shallow water), floats, rafts, inner tube, floaties or life vest for little ones(it does get deep in the middle), crock shoes or swim shoes (the waterfall area is very slick), my kids like to bring goggles so they can dive down and look for fish (the water is very clear and you can see everything),a bucket to hold the minnows that the kids catch, a small net to chase minnows with and I usally bring bandaids and some small type of first aide kit too.

7. Q: How do I get there?  A: From Tulsa, go east on RT 412 to Locust Grove then north (left turn) on RT 82 to Salina. In Salina, find Kenwood Rd. and go east for about 7 miles to the park.

We come from Owasso so we just head to Claremore on Hwy 20 and just take 20 East to Salina, when we are in Salina we just follow the road all the way to the 4 way stop and keep going straight and then follow the winding road for 7 miles and Blue Hole is on the right side.

8. Q: What is the phone #?  A: 918-434-5507 and the owners name is Wanda!

9. Q: Is there really a rope swing? A: Yes, follow the creek that leads out of the Blue Hole and it leads to a smaller hole and that's where the rope swing is at. UPDATE:I'm sad to say that the rope swing is now gone.  A storm came through and the large tree that the rope swing hung on was destroyed.

Wrong bathroom

I really hate using public bathrooms and this is one of the many reason's why!  I was in the bathroom at the hospital exiting a stall when this dude comes running in and goes into a stall and does his business, leaves the stall door open and everything then just runs out with pants not zipped up and stares at me while I'm washing my hands.  I say you are in the wrong restroom, this whole time thinking it's a guy.  My mistake...it was a really manly looking woman...she wasn't happy with my comment and walked out without washing her hands ewww! I felt HORRIBLE!!!!

Korea Camp 2010

Every year we sign our kids up for Korean culture camp, since they are adopted from S. Korea we feel it's our duty to help them learn more about their Korean culture plus they get to hang out with all the other kids that were adopted from Korea and they are building a lifetime of memories!  If you would like your children to attend Korean culture camp you can click here and you don't have to be Korean to attend.  Here is a slideshow of the pics from camp, hope you enjoy it!  The kids also get to see that their are a lot of other kids that look just like them, with beautiful almond shaped eyes and that gorgeous skin tone and the glossy, black hair.  They learn how to handle racial comments or hurtful comments about adoption, this is very useful, you would be surprised at all of the inappropriate questions we get asked about Korea and the adoption process.
Oh, it also gives us parents a nice time to visit and attend classes like Korean cooking class,  workshops on how to be better parents to our adopted children, and we hear from Korean birthmoms and learn more about the Korean culture and the guys go golfing a lot of the time!

Zombies

This was the last time for the zombies to dance together (or so we thought) and they were AMAZING!!! 1st place trophy, Excellence in Dance award and then they were asked to come back on Sunday and dance in the finale at the dance off. They totally rocked it! Hard work and dedication by all of the team and especially from Shayna. We ♥ you Shayna!!! This team had so many obstacles to overcome, they had 3 or 4 members drop off the team and they had to add new members in that had to learn the dance and 1 week before nationals we had a new guy join and he had to learn the whole dance in just a week...way to go Blake, Stacy and Shayna for making that work out!
Shayna got some of that liquid latex and painted ugly, nasty scars all over their faces and then put the zombie makeup overtop and it was NASTY but looked great! These kids were really dedicated by coming in 2-3 hrs early to get hair, makeup and costumes on before each performance!
