New Recipe of the week 8-blackberry cobbler

Last summer we went blackberry picking with our home school group and we ate most of them but I froze enough for a couple of cobblers and today we decided to make the Pioneer Woman's Cobbler #1 this is the one that's in her cookbook Pioneer Woman Cooks which I HIGHLY recommend!  I have just enough blackberries left to make the Pioneer Woman's Cobbler #2 next time, it looks delicious too!  I'll let you know the verdict of which one we like the best.




Ingredients

  • 1 stick Butter
  • 1-¼ cup Sugar
  • 1 cup Self-Rising Flour
  • 1 cup Milk
  • 2 cups Blackberries (frozen Or Fresh)

Preparation Instructions

Melt butter in a microwavable dish. Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all well together. Butter a baking dish.
Now rinse and pat dry the blackberries. Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.
Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it’s done.

I love blackberries . . . as children we used to go blackberry picking in the woods and took them to the neighbor who always made all kinds of delicious treats with them. Your post took me back to those days :) No more blackberry bushes around here . . . houses took their place.

Oh, I love Pioneer Woman...and, I love Blackberries. I will have to try this in the near future. However, fresh blackberries rarely make it into anything since everyone loves them so.
